These dishes are full of antioxidant ingredients namely nuts, blueberries and turmeric helps to boost your wellbeing, slows down the aging process and even protects you from disease. The following recipes are for evening snacks but they are so delicious you can actually have them anytime of the day or night!
Easy green superfood salad
Ingredients for salad
- Mixed green salad leaves – 4 cups
- Broccoli, sunflower, snow pea – 2 cups
- Chopped cucumbers – 2 chopped
- Cubed avocado – 1
- Chia seeds – 1 tbsp
- Sunflower seeds – 1 tbsp
- Pumpkin seeds – 1 tbsp
- Parsley – to serve
Ingredients for dressing
- Lemon juice – 1 tbsp
- Raw apple cider vinegar – 1/8th cup
- Cold pressed olive oil – 1/4th cup
- Wholegrain mustard – heaped
- Himalayan pink salt and pepper – to taste
One must place all the ingredients for salad in a large sized bowl and toss them until they are all fully mixed. Take a medium sized screw top jar, put in all the ingredients for dressing and shake them till they become smooth. Now pour this dressing over the salad, toss them thoroughly and top with fresh parsley before you serve.
Blueberry & Coconut friands
- Caster sugar – 100g
- Self-raising flour – 75g
- Desiccated coconut – 45g
- Almond meal – 30g
- Egg whites – 4
- Melted butter – 125g
- Fresh blueberries – 100g
Preheat the oven to around 200C. Grease properly ¼ cup capacity oval shaped friand pans. Mix the ingredients like sugar, coconut, flour and almond meal in a medium sized bowl. Add the egg whites slowly and, if available, use a clean wooden spoon to stir it. Now add the heap of melted butter and stir again to mix it properly.
Spoon the mixture among the pans. Place around 5 – 6 blueberries on top of the friands and press them to indent into the cake mixture. Bake this in the oven for 15 min or till a skewer comes out totally clean. Then remove it from the oven and slowly place it on a rack so that it slowly cools down.
Lastly brush the top portion of the friands with water and sprinkle extra coconut, if any, before you serve.
